Preparation
1. Half the watermelon, scoop out flesh and place into a blender. Process until smooth and strain through a fine-mesh sieve to remove most of the pulp and seeds.
2. Juice 2 of the lemons (reserve one for slicing to use as garnish). Add lemon juice to watermelon juice, place in large pitcher and chill in refrigerator until ready to use.
3. Place ice in individual glasses. Pour watermelon mixture over ice, add a few slices of lemon and a sprig of mint for garnish and serve.
