Preparation
1. Preheat oven to 400 degrees.
2. Cut sweet potatoes into ½-inch thick strips. Place in large bowl and toss with olive oil.
3. Place on large jelly-roll pan and roast for 15 minutes. Turn and roast another 15 minutes or until potatoes are browned and crispy.
4. Remove from oven and sprinkle with salt, pepper and parsley before serving.
