1.Place shrimp in medium bowl. Add dry sherry and salt. Toss gently.2.Heat wok or heavy skillet until very hot. Add peanut oil.
3.Pat shrimp dry with paper towels. Add to wok and stir-fry until nearly cooked (about 2 minutes).
4.Add ginger, garlic, chile-garlic sauce and pickled chilies and stir-fry about 1 minute.
5. Add water, soy sauce, green onion slices, red bell pepper and sugar snap peas.
6.Stir-fry until the liquid is slightly reduced and shrimp are cooked through, about 2 minutes.
7.Drizzle sesame oil over shrimp; toss and serve over brown rice, if desired.
