Oil salmon filet with olive oil, add salt and pepper, then grill to your liking. Start with about 4 minutes per side for medium rare to medium (thicker filets take longer). Remove dark green outer leaves of each head of romaine. Slice in half, lengthwise. Pour a little olive oil onto a clean plate, then place romaine in the oil, cut-side down. Grill the cut side for about 1 minute, until slightly wilted. Place romaine on the plate, cut-side up. Drizzle herb vinaigrette over romaine and on the plate. Top with shaved Parmesan.
