1. Preheat your oven to 350 degrees F. Spray a 9 by 9-inch baking dish with O Organics Olive Oil cooking spray.
2. Stir the sliced apples, pears, sugar, flour, vanilla, cinnamon, ginger, salt, lemon juice and 2 tablespoons of the butter together in a large bowl. Add the mixture to the prepared baking dish and spread the remaining 2 tablespoons of butter over the top.
Topping
3. In a separate bowl, combine 1/2 cup self-rising flour, 1/2 cup sugar, 1/4 tsp salt, and 1 egg and mix well. With a spoon, drop the topping onto the apples and top with pats of butter. Bake until the crust is golden and the fruit is tender the cobbler for 40 to 45 minutes. Serve with vanilla ice cream and Cool Whip.
