In a large mixing bowl, whisk together flour, baking soda, cinnamon, allspice, ginger and salt. Then set aside.

Using either a hand mixer or a stand mixer, beat together on medium speed the butter and brown sugar until mixture is smooth and creamy. This will take about 2 minutes. Add eg, water and molasses and mix until fully incorporated. Scrape down the sides of the bowl as needed. Turn the mixer speed down to low and slowly add in dry ingredients. Dough will be thick once fully combined

Divide dough in half and roll out into discs roughly with a 5 in diameter. Wrap tightly in plastic wrap and place in the refrigerator to chill for 2 hours or up to 3 day.

Preheat the oven to 350. Line 2 to3 large baking sheets with parchment paper.

Roll out dough to about ¼ inch thick. Using a template or free handing it carefully cut out house shaped pieces. Remember you will need two of each piece.

Bake larger pieces for 18-20 minutes or until the edges are golden brown. Smaller pisces will only bake for 12-13 minutes. Once cooked, lay on a flat surface to cool. This ensures the pieces do not warp.

Buttercream Icing
1/2 cup shortening, at room temperature
1/2 cup unsalted butter, softened to room temperature
4 cups confectioners’ sugar
2 Tablespoons milk
1/4 teaspoon pure vanilla extract
1/8 teaspoon salt
