1. Preheat oven to 350 degrees. Prepare 12 large muffin tins by spraying liberally with cooking spray.
2. In large bowl, whisk together eggs, egg whites, Parmesan cheese, salt and pepper.
3. Fill tins with ½ of the egg mixture. Top with equal portions of spinach, mushrooms and cheese shreds. Add jalapenos, green onions and tomato, if desired.
4. Bake for 22-25 minutes. Remove from muffin tins and serve or cool on wire rack and wrap in plastic wrap. Store in refrigerator for up to one week. Remove 1 or 2 for breakfast, heat in microwave for about 30 seconds and breakfast is ready.
