Preparation
1. Line a cookie sheet with parchment paper, and preheat oven to 350 degrees F.
2. Place dough on cookie sheet. Using your hands, form cookie dough into the shape of an Easter egg. Bake for 12-15 minutes, until center is cracked and sides are golden-brown. Cool completely to room temperature.
3. Meanwhile, add Neufchatel cheese and cherry juice to a large mixing bowl. Beat together on high until light and fluffy. Spread onto cooled cookie crust.
4. Top with fresh berries and enjoy!
